Resorts World Las Vegas to welcome Stubborn Seed

(PRESS RELEASE) -- On, Monday, 10 February, Stubborn Seed, the Michelin-starred restaurant helmed by Bravo’s Top Chef season 13 winner, Chef Jeremy Ford, and powered by the award-winning Miami-based restaurant group, Grove Bay Hospitality Group, will debut at Resorts World Las Vegas. Stubborn Seed will showcase Chef Ford’s unrelenting passion and unapologetic approach to fine dining, offering guests a truly unforgettable dining experience in the heart of the Las Vegas Strip.

“The energy in Las Vegas is electric and I’m so excited to bring Stubborn Seed to this town,” says Chef Jeremy Ford. “Stubborn Seed is a unique restaurant where we aim to bring our guests the best global flavors, paired with precision from both our incredible kitchen crew and the front-of-house team. The tasting menu is a culinary journey and we’re ready to take folks for a ride.”

Guided by the vision of Chef Ford, a 2022 James Beard Award semi-finalist, Stubborn Seed delivers an impeccably curated dining experience, highlighted by its signature tasting menu, starting at $135 per person for eight courses and $175 per person for ten courses. Wine pairings and elevated enhancements will also be available. Each visit will be unique and special, as the menu will be based on seasonal availability. An a la carte menu will also be available exclusively at the bar-lounge and the enclosed patio, slated to open this spring. Additionally, Stubborn Seed Las Vegas will boast a strong beverage program composed of thoughtfully curated cocktails such as the Negroni a La Ford crafted with mezcal, campari, Cocchi Americano and ancho chile liqueur; Kill Dill with gin, Dolin Génépy, cucumber, dill syrup, fresno pepper, egg white and embellished with fresh lime; Fennel Fields Forever with vodka, botanical liqueur, sour apple fennel juice, rosemary syrup and lime juice; Sage Butter Baby combines aged bourbon, Disaronno, sage demerara, egg white and lemon juice.

A sample of the courses featured on the Stubborn Seed tasting menu includes:

- Castelvetrano Olive Ciabatta with whipped feta, kalamata dust and pickled baby radish
- Kaluga Caviar Macaroon with champagne citrus crema and dill
- Hudson Valley Foie Gras Tart topped with Fuji apple gelee, pine nuts and feuilletine
- Sake and Citrus-Cured Japanese Yellowtail with chili ferment, crispy tapioca, ylang ylang, compressed Asian pear and passion fruit buttermilk emulsion
- Winter Truffle Ricotta Gnudi topped with maitake mushroom, pine nuts, buttery greens and winter black truffle
- Intermezzo of sour apple sorbet, fennel granita and Ford’s Farm rosemary gel
- Pan Roasted Barramundi with baby leeks, fennel, shiitake sofrito and galangal green curry
- Wagyu Beef Tartare Cannelloni served with papaya kimchi, lemon emulsion and cured egg yolk
- Dry-Aged Crescent Farm Duck topped with brown butter soubise, lion farm’s mushrooms, Marcona almonds, fermented soybean, crispy miso cabbage and XO hollandaise
- Winter Citrus Pavlova, an olive oil cake with yuzu pastry cream, mandarin pate de fruit and caramelized pistachios

Chef Jeremy Ford and Grove Bay have partnered with Celano Design Studio to bring the vibrant art deco spirit rooted in Miami Beach’s exclusive South of Fifth neighborhood to Las Vegas. As guests enter the intimate space, they will be greeted with a signature art deco façade, drawing inspiration from Stubborn Seed’s Miami Beach roots. Lush green foliage will follow guests into the bar-lounge, boasting the signature glass-fronted display kitchen, where Chef Ford and his team will be found. The sleek and sexy bar-lounge will be complete with a view of the expansive, glass-enclosed wine collection, dark and rich leathers and textures, as well as a custom chandelier, providing another nod to the original location. A hand-painted mural will greet guests in the main dining room, combining rugged charm with sophistication, featuring red leather banquettes and a ceiling adorned with tiered, ribbed-glass chandeliers. The exclusive private dining room echoes the signature style of the restaurant and also features views of the custom wine room and intimate seating. This spring, Stubborn Seed Las Vegas will debut the outdoor patio, an oasis on the Las Vegas Strip bringing the indoors outside with lush greenery and sparkling glass pendants. Stubborn Seed will be located within The District and just off of the Conrad’s main porte-cochère.
