The Cosmopolitan to open Blue Ribbon Restaurant

12 December 2016

(PRESS RELEASE) -- The Cosmopolitan of Las Vegas is pleased to announce that Bruce and Eric Bromberg will unveil a new Blue Ribbon Restaurant, inspired by the original Blue Ribbon Brasserie in New York City, in Spring 2017. Chefs and owners Bruce and Eric Bromberg will bring a fresh dining style to the Las Vegas market, serving eclectic New American fare, including their groundbreaking raw bar, as only they can.

Known as the restaurant "where chefs go to eat," Blue Ribbon's approach to relaxed yet elevated comfort food was a ground-breaking concept when the original and flagship restaurant, Blue Ribbon Brasserie, first opened in New York City's SoHo in 1992. At The Cosmopolitan, Blue Ribbon will build on the Bromberg brothers' original vision, but will be informed by the bustling energy of the Las Vegas Strip.

"We've seen great success with Blue Ribbon Sushi since the opening of the resort in 2010," said co-owner Bruce Bromberg. "We're excited to continue our tenure at The Cosmopolitan by mixing things up and introducing our classic American restaurant concept to Las Vegas locals and guests at The Cosmopolitan. We hope to move quickly through the construction and training process so we can re-open our doors in Spring 2017."

At The Cosmopolitan, Blue Ribbon's menu will draw heavily from the original SoHo eatery, brimming with favorites that the Bromberg Brothers have made famous, including raw bar offerings and pu pu platters, as well as signature comfort dishes like bone marrow with oxtail marmalade, fried oysters, steak tartare and their famous fried chicken. As the nation's go-to spot for serious gastronomes, Blue Ribbon at The Cosmopolitan will offer brunch, lunch and dinner service, and will stay open late to cater to those who want to party the night away in a relaxed atmosphere.

For over 20 years the Blue Ribbon Restaurants have embodied the spirit of individuality by offering truly authentic dining experiences. With unparalleled hospitality, high quality food, and enduring design, those experiences will be at the heart of Blue Ribbon at The Cosmopolitan. The Asfour/Guzy-designed space will provide the ideal backdrop -- a sea of shimmering chandeliers, tinted cement and glazed antique tile will create an aura of both casual conviviality and celebratory elegance.

The new Blue Ribbon will open in the space which has been the home of Blue Ribbon Sushi Bar & Grill since the luxury resort opened on New Year's Eve in 2010.
