Park Place Announces Addition of Two Restaurants to Paris Las Vegas

A partnership between the hotel's owner, Park Place Entertainment Corp., and one of the nation's leading private restaurant companies, Lettuce Entertain You Enterprises Inc. was announced Thursday. The partnership will result in the opening of two restaurants: Mon Ami Gabi and the resort's signature Eiffel Tower restaurant.

Joining Paris Las Vegas' six other French-inspired restaurants, which range from a rotisserie to a working bakery churning out fresh French breads and pastries, Mon Ami Gabi and the Eiffel Tower restaurant will be part of the property's attempt at creating an authentic Parisian environment.

"The Eiffel Tower restaurant will be Las Vegas' premier Parisian dining destination, offering exquisite French cuisine and ambiance high above the Las Vegas Strip," said Paul V. Pusateri, president of Paris Las Vegas and Bally's. "We are proud to work with Lettuce Entertain You to develop two restaurants that will help Paris Las Vegas provide an authentic and unparalleled French culinary experience."

Paris Las Vegas executives, along with Joho, chef and owner of Chicago's acclaimed Everest and Brasserie Jo, will dedicate their efforts to making the Eiffel Tower restaurant Las Vegas' ultimate dining spot, serving classic French cuisine. The restaurant will be located on the 11th floor of the 50-story Eiffel Tower replica. Guests will enjoy the restaurant's romantic ambiance and piano bar while taking in the breathtaking view of the Las Vegas Strip.

Chef Gabino Sotelino, recipient of the prestigious James Beard Foundation's Perrier-Jouet Chef award, will introduce Las Vegas to Mon Ami Gabi, which will mirror the renowned Chicago establishment. With accommodations for 250 guests, Mon Ami Gabi will be the only restaurant with outdoor seating on the Las Vegas Strip and will feature simple lunch and dinner fares including Classic Steak Frites and Fruits de Mer served in a variety of styles.

Lettuce Entertain You Enterprises Inc. owns, manages and licenses more than 70 establishments in Arizona, California, Georgia, Illinois, Massachusetts, Minnesota, Texas, Virginia and Japan. The restaurants range from casual style cuisine to the formal elegance of the four-star restaurants Everest and Ambria.

Upon completion, Paris Las Vegas will feature 2,916 guest rooms, including 295 suites and 130,000 square feet of convention and meeting space, including an 85,000 square-foot ballroom (the largest in Las Vegas). With its hotel tower modeled after the famous Hotel de Ville in Paris, the Las Vegas resort will have eight French-themed restaurants, five lounges, a European health spa and a 1200-seat theatre. The 24-acre property will feature replicas of famous Parisian landmarks, including the Arc de Triomphe, Paris Opera House, The Louvre and a 50-story Eiffel Tower.
