Mandalay Casino chef honored

CALIFORNIA – (PRESS RELEASE) -- Santé, the Magazine for Restaurant Professionals, recently named their 2006 Culinary Hospitality Award winners in Napa Valley, Calif. Chef Rick Moonen of restaurant rm at Mandalay Bay Resort & Casino was awarded the Grand Award of Culinary Professional of the Year. The award is given to a chef who exhibits a high level of professional achievement in the culinary arts while displaying a passion for his work and commitment to excellence.

Santé Restaurant Award winners are chosen on a variety of criteria and represent a broad spectrum of restaurant and hospitality industry professionals–owners, chefs, food and beverage managers, general managers and wine professionals.

Rick Moonen is the executive chef and creator of restaurant rm and r·bar café, the multi-level restaurant inside Mandalay Place. The restaurant includes a 250-seat café and raw bar, an 85-seat luxury dining room, a lounge and multiple private dining options. Moonen is a devoted advocate for sustainable seafood, dedicated to educating consumers about ocean conservation and the dangers of over-fishing. As an industry leader, he has testified several times for environmental and sustainable policy issues in Washington D.C. and New York.
