Estiatorio Milos opening at The Venetian Las Vegas on Monday13 March 2021(PRESS RELEASE) -- Costas Spiliadis and The Venetian Las Vegas proudly announce the 15 March opening of a new Estiatorio Milos, the world’s most celebrated Greek seafood restaurant, to be located in Restaurant Row of the iconic Las Vegas resort. Known for its signature seafood market featuring fresh fish flown in from the Mediterranean, Milos also introduces a new fruit and vegetable market, a raw bar, a yogurt room, and a curated list of fine Greek wines to complement the experience. “I am so happy to open the doors of Milos at this new home in Las Vegas,” said Spiliadis. “My team, led by Chef Jesse Maldonado, and I look forward to welcoming everyone to such a beautiful location. It is an important moment for us.” The new restaurant will be open for lunch and dinner, serving an à la carte menu of dishes that are meant to be shared and enjoyed in a comfortable family-style setting. Of particular interest to loyal customers is the continuation of the restaurant’s classic lunch menu, beloved by locals. Spiliadis, one of the most influential chefs in Greek cooking, has risen to prominence thanks to an insistence on purity, quality, and minimalism. Pristine ingredients cooked with precision have made Milos a symbol of clarity and excellence. As always, the undiluted flavors of nature illuminate the cuisine. “The addition of Milos to The Venetian Resort brings our collection of award-winning signature restaurants to a new level,” said George Markantonis, president and chief operating officer of The Venetian Resort Las Vegas. “Milos is known internationally for its quality execution and unique dining experiences. Our guests who ‘want the world,’ will find plenty to explore at this new culinary gem within our iconic resort.” NEW MILOS FEATURES Complementing the iconic Milos fresh fish market will be an exquisite new produce market, where patrons can select from an array of fresh fruits and vegetables to accompany their meals. In addition, a raw bar will feature whole fish sashimi using the day’s fresh catch and a variety of crudo and tartare preparations. A selection of Greek wines by the glass will be showcased in the bar for guests to discover, along with signature cocktails. VISUAL IDENTITY OF MILOS The name “Milos” is a reference to the Greek island in the Aegean Sea, and also in the Greek language to a windmill, a subtlety that resonates throughout the restaurants. The architecture echoes the essence of Greek Cycladic landscapes. With an open kitchen, bar, spacious dining room, “yogurt room” where yogurt is strained in the classical way, and private dining rooms, the space is modern while reflective of its roots. Architect Alain Carle uses stone, wood, and Pentelikon marble – a key material in all of Spiliadis’ venues – to evoke the simplicity and emotion of Greece. Milos will open for lunch daily from 12 – 3 p.m., dinner Sunday - Thursday 5-10 p.m., dinner Friday -Saturday 5-11 p.m. at Restaurant Row in The Venetian Resort on 15 March 2021. |
