Borgata to Help Launch Cookbook7 September 2005ATLANTIC CITY – (PRESS RELEASE) -- "Fresh inspiration" comes to the Borgata Hotel Casino & Spa (1 Borgata Way; 866.MY BORGATA) this fall, when Susanna Foo, internationally acclaimed chef, restaurateur and author, celebrates the release of her second cookbook by the same name. Joining Foo to mark the special occasion is celebrated winemaker Aurelio Montes, President of Montes Wines (Chile), who will co-host a special five-course dinner and wine-pairing event at Suilan, Foo's signature Asian fusion restaurant at the Borgata. Guests are invited to join the legendary chef and winemaker on September 22nd to celebrate the launch of Foo's new cookbook, Susanna Foo: Fresh Inspiration and Montes' exciting first visit to the Borgata. Along with her Executive Chef, Martin Doyle, Foo has created an exciting and enticing tasting menu spotlighting dishes from Fresh Inspiration, each paired with and wines personally selected by Aurelio Montes and Shawn Dore, Borgata's Wine Director. "I am so delighted to bring my new cookbook Fresh Inspiration to my guests at the Borgata," says Foo. "I hope this dinner helps the book 'come alive,' as guests will be able to personally experience my favorite selections paired with Montes' exquisite wines." The unforgettable evening begins at 6:30 pm with a wine reception where guests can sample two exceptional selections: Montes Sauvignon Blanc and Pino Noir, both from 2004. A sit-down dinner follows at 7:00 p.m. in the elegant Suilan dining room. The first course of deliciously crispy Korean Pancakes with Citrus Cured Salmon and Arugula and Gold Beet Salad with Citrus Vinaigrette are served with Montes 'Leyda' Sauvignon Blanc 2004. The second course consists of Chef Foo's signature Shrimp in Lobster Sauce, a Chinese classic, paired with a 2004 Alpha Chardonnay. Guests will then move on to a succulent and decadent Tea-Smoked Duck Breast is accompanied by Broccoli Rabe with Sun-dried Tomatoes, and paired with a 2003 Alpha Syrah. A fourth course of perfectly tender Wuxi-Style Braised Beef Short Ribs is served atop Cauliflower Risotto with Wild Mushrooms accompanied by Alpha M 2003. Montes' Alpha M series is first super-premium wine ever made in South America. A darling of the press, the last vintage received a 94 rating, and the 2003 Alpha M is expected to receive an even higher mark. The grand finale is choreographed by Borgata's rising culinary star, Executive Pastry Chef Daniel Pino, who prepares Chef Foo's Almond Financiers with kumquats, a perfect accompaniment to the Montes' 2004 Late Harvest dessert wine selection. "This tasting dinner marks two very special occasions at the Borgata: Chef Foo's new cookbook and Mr. Montes' first visit to the resort," says Victor Tiffany, Vice President of Food and Beverage for Borgata. "We could not be prouder of Chef Foo's cookbook and we are delighted to honor her with this dinner. Montes is one of the most exciting "New World" wineries out there today and our Wine Director, Shawn Dore, has long spotlighted their wine at Suilan, so it is an honor to have the visionary behind the winery here tonight." The dinner is the first installment of this season's Borgata Food & Wine Experience series of tasting events, exclusive culinary gatherings that occur at Borgata's signature restaurants.
