Newton Vineyard hosts wine dinner at Pala Casino

(PRESS RELEASE) -- Newton Vineyard, the venerable St. Helena winery, will host a five-course dinner and wine pairing at 7:30 p.m., Thursday, 28 September, in the underground wine cave at Pala Casino Spa and Resort. Doors will open at 7 p.m.

Reservations are $75 per person, plus an 18% gratuity, may be made by calling 1-877-946-7252. Guests should ask to "book the wine dinner on 28 September."

The first course will be King Crab Crudo with Smashed Avocado, Ancho Chile Aioli and Watercress Puree paired with a Newton Sparkling Rose. The second course will offer Seared Big Eye Tuna with Pistachio Crust, Mango Grapefruit Salsa and Spicy Siracha Caviar with an Unfiltered Chardonnay, followed by Bacon-Wrapped Quail with Chjpotle Maple Glaze and a Stuffed Quail Egg paired with an Unfiltered Pinot Noir. The fourth course will offer Pot-au-Feu with a Short Rib, a Veal Shank, a Lamb Loin, Cipollini Onion and Fresh Young Peas with a Red Wine Reduction paired with an Unfiltered Merlot. Dessert will be Chef Albert's Chocolate Creation with an Unfiltered Cabernet Sauvignon.

Newton Vineyard was one of the first wineries on Spring Mountain, a rugged yet serene appellation located west of St. Helena on the eastern flank of the Mayacamas range. Newton Vineyard was established by Dr. Su Hua and Peter Newton, whose trailblazing vision transformed the hillside into a 540-acre estate with 120 acres of planted vines.

Newton's approach to winemaking is meticulous, using techniques based on an old-world style including natural fermentation and bottling without filtration. The grapes are handled with care, hand-picked in small lots and transferred to the cellar for gentle pressing. The winery is custom-designed to allow lots from 112 distinct parcels on the property to ferment separately, affording the winemaker an abundance of options when constructing final blends. Barrel aging takes place in a cave built into the mountain directly beneath the winery and its iconic gardens.
